Scrambled eggs with Bell peppers
Ingredients:
Bell peppers- 2 (medium size)
Red onion-1
Chili powder- 2 tea spoons
Turmeric powder-1/2 tea spoons
Salt to taste
Eggs-3
Black peppers- 1 tea spoon
Method:-
1) Slice & dice Bell peppers in to small pieces.
2) Now Slice the onion in uniformly –shaped pieces.
3) Now heat oil in a deep fry pan.
4) Throw sliced onion strips in there & stir fry till
they become translucent.
5) Now add sliced and diced Bell peppers & continue
to stir fry for 5 minutes. When you see oil is above to form the pieces add 2
tea spoons of red chili powder, turmeric powder & salt to taste. Stir it
for a few minutes.
6) Now crack the eggs & place it over the Bell
peppers & sprinkle some salt, chili powder, black pepper powder and put a
lid on.
7) Cook this for 3 minutes & the using a spoon
scramble the eggs and turn down the heat.
Hard boiled egg masala
Fried egg pieces all set to go in to curry
Ingredients:-
4 eggs - Boiled,
peeled, sliced in to large pieces
Ginger garlic
paste- 1tsp
Finely chopped
tomato-1 1/2
Finely chopped
onion-1
Coriander
powder-1 tsp
Turmeric powder-1/2
tsp
Chili powder-2
tsp
Fennel seeds
powder-1 tsp
Garam masala
powder-1 tsp (optional)
Salt to taste
Oil to fry
Tamarind paste-1
tsp( optional)
Chopped coriander
leaves-2 table spoon
For coating of
egg cover-
Eggs-2 (beaten)
Milk-3tbsp
Salt to taste
A pinch of Pepper
powder
Method:-
1)
Heat oil in a pan.
2)
Mix all the ingredient called for “coating”.
3)
Dip egg slices in the batter & fry both
sides in the hot oil.
4)
Remove them on to a plate & keep a side. ( follow the picture)
5)
In a heavy bottom vessel add the left over oil
in the pan & heat.
6)
Throw chopped onions in there & sauté for 5
minutes.
7)
Now add ginger garlic paste & continue to
sauté for another 4 minutes.
8)
Now add curry leaves, chili powder, turmeric
powder, fennel powder, Salt, cumin powder & sauté for another few minutes.
9)
Now add tomato fry till oil come out.
10)
Now add little water & tamarind paste, garam
masala & put a lid on it.
11)
Cook it for about 10 minutes under law flame.
12)
After 10 minutes add fried egg slices &
simmer till you achieve the desired gravy consistency.
13)
Turn off flame & sever with white,plain rice or
rotties.
Egg curry (Srilankan style)
Ingredients:-
Peeled Potatoes:
- 3
Chopped Onions:-2
Garlic: - 7
cloves
Ramphe
A hand full of
Curry leaves
Termiranders:-5
cloves
Green Chilies:-6
Thick Coconut
Milk: - 3 cups (300ml)
Light coconut
milk: - 2 cups (200ml)
Carrot: - 2
French
Beans:-150g
Thunapaha Powder
(curry powder):-2 teaspoons
Chili Powder:-1
teaspoons
Turmeric powder:
- ½ teaspoon
Salt to taste
Fenugreek seeds:
- 1 teaspoon
Boiled eggs: - 7
Method:-
1) Peeled the boiled eggs.
2) Cut peeled Potatoes & Carrot in to square
pieces.
3) In a pan add carrot, potatoes, chopped
onions, chopped garlic, curry leaves, ramphae (pandan leaves), fenugreek seeds, chopped Green
chilies, cut French beans, tamarind ,
Salt , tunapaha Powder (curry powder), chili powder, turmeric powder & light
coconut milk and cover the pan & cook until potatoes
& carrots are tender.
4) Now add thick coconut milk & stir it
constantly for about 5 minutes..( stirring the curry is very important as it
prevents clotting)
5) Turn off the stove & top up with little roasted
thunapaha Powder (Curry Powder) & put a lid on it.
6) Garnish it with chopped coriander leaves.
Egg Masala – Bengali style
Ingredients:-
Boiled eggs: -

Peeled potatoes:
- 3 (big in size)
Ginger garlic
paste: - 1 table spoon
Chopped Onions:-2
Green Chilies:-4
A hand full of
Chopped Coriander leaves
Sugar: - 2
teaspoons
Salt to taste
Red Chile Powder:
- 3 teaspoons
Turmeric
powder:-1 teaspoon
Cumin powder: - 2
teaspoons
Coriander Powder:
- 2 teaspoons
Chopped
tomatoes:-2
Method:-
1) Cut potatoes
in to big sizes & add turmeric & salt in there. Now marinate it for 5 minutes.
Bring eggs to
boil & peel them.
2) Now add salt
& Turmeric & marinate for 3-4 minutes & fry them till egg cover gets
golden brown.
3) Grind chopped
Tomatoes.
4) Heat oil in a
pan & add marinated potatoes & fry them colored golden brown.
5) Now keep
Potatoes aside & add ginger garlic paste to the remaining oil in the pan
stir fry.
6) Now add
chopped onions & fry them till colored transparent.
And then add
blended tomatoes & silted green chilies & sauté it well.
7) Now add Red
Chili Powder, Turmeric, Coriander powder, Cumin Powder, & salt & sauté
it well.
8) Now cook this
for about 10 minutes. ( you can see the curry turns to red & oil form out
of it ; that’s when you know to add your eggs)
9) Add your fried
eggs & cook it for about 10 minutes.
10) When curry
is well done you can add 1 1/2 teaspoons of sugar to it.
11) Conclusively
add chopped coriander & leave it uncovered.
Adding sugar to the curry will increase the taste & will add flavors to it. If any one do not prefer to add sugar you can avoid adding it.
