Roasted Lamb Leg
















Ingredients: One big lamb leg, 5 tea spoon of red chilli powder, Juice of 1 lemon, 2 tsp of dried rosemary powder, salt to taste, 50g of butter, 4 tsp of black pepper powder, 5 cloves of crushed garlic
Method: Wash & clean lamb leg, poke deep holes scattered evenly over the surface of the lamb leg using a knife. Now bring all other ingredients together & mix it well, rub the mixture all over the surface of the lamb leg, insert some rosemary pieces in to the holes that already been made. Now allow this for marinating over night or at least minimum of 2 hours.  Grill this under grill mode until done. Half way through the grilling turn the leg upside down & apply some extra butter & continue to until done. Can also roast this in oven at 350C for about 30 minutes. This is such a delightful & tasty recipe that makes everyone happy. Lamb has such wonderful flavor on it’s own, it is so naturally tender, that it is bound to turn out well as long as it is still a little pink inside. This wonderful  recipe is easy to cook at home. Deep fried chicken





Ingredients:
Chicken -Medium size farm chicken suits best for this fry, Coriander powder-4 tsp, cumin seeds-3 tsp, red chilli powder-4 tsp, turmerric-2 tsp, Salt to taste, ginger garlic paste- 4 tsp, lemon juice- 6 tsp, 1 l of oil to deep fry, srilankan curry powder-2 tsp(optional), deseeded tomatoes for garnishing
Method: Clean & wash the chicken thoroughly, combine all the ingredients together except deseeded tomatoes, using a fork poke holes all over surface of the chicken, apply the mixture all over the chicken, allow it to marinate for 1 hour, heat oil in large deep fry pan or in electronic deep fryer, put the oil in there & heat up , once oil got heat up place the chicken carefully in the pan,u can use a long handled spoon to avoid any burning, put a lid on it, turn the heat to law, fry for 35 minutes to 45 minutes under law heat, half way through the frying @ about 20 minutes turn the chicken upside down, now continue to fry until done, turn off the heat using long handled spoons  take the chicken out & drain the excess oil on kitchen tissue papers, garnish with the way you like it, serve it hot.  Honestly this is not a very good recipe for calorie conscious people. if you are really conscious about your calorie in take eat less quantity & work out at least 1/2 hour.

To make srilankan curry powder- Dry roast equal quantity of cumin seeds, funnel seeds(sump), coriander & curry leaves in a pan, do not burn it, now grind everything in a coffee grinder in to a fine powder.

Sesame Chicken with red wine






Ingredients:Chicken-500g,sesame seeds- 5 tea spoons,turmeric- ½ tea spoon,chilli powder-3 tea spoons,salt t o taste,onions-250g,black pepper-3 tea spoons,cinnamon sticks-2,red wine -3 table spoons

Method:-*   Wash chicken & cut in to medium size pieces, place cut up chicken in a pot & add cinnamon, black pepper, chilli powder, turmeric powder, Salt to taste, red wine mix all together, allow it to marinate for 30 minutes or over night now add 1 cup of water & bring it to boil,heat oil in a deep fry pan & thro sliced onion in there, stir fry this until onion become translucent & then golden brown, when onion is done add boiled chicken pieces, you can throw out the marinade or can be used in a soup or vegetable or chicken stew, now continue to stir fry until chicken pieces turn in to greasy, now at this point sprinkle some sesame seeds over the chicken & turn down the heat. This is a healthier version of fried chicken. Usage of oil is comparably law with other deep fried chicken. This is my own creation. I am very fond of fried chicken but was feeling guilty each time i ate it so that wanted to create some kind of  fried chicken with minimal usage of oil...one day  i got an idea & that idea used in practice. That's how this chicken recipe created. You can always use that chicken marinade in different dishes like vegetable stew,  chicken stew, chicken curry ..do not waste instead preserve it in the refrigerator & use it latter.

Home made Takos







Ingredients for the tacos:
American flour- 3 cups
Ghee or butter-50g
Maize flour-1 cup
Salt to taste
Ingredients for the stuffing:
Potaos-2(big size)
Garlic-2 pods
Cream-3 tea spoon
Moyonase-1 tea spoon
Black pepper-1 tea spoon
Chilli powder-1 tea spoon

Method:-
1) Bring the potato to boil. Peel off the cover.
2) Crush garlic pods using wood or stone or wooden pounder.
3) Now bring garlic, cream, mayonnaise, dried parsley, salt, black pepper, chili powder together & smash thoroughly.

4)      Now make some burger patties with potato mixture & heat oil or butter in a pan.
5)      Now place them on the pan & fry it under law flame. Turn sides continue to fry until both the sides become golden brown.
6)      Keep them aside.
    7)      Mix American flour, salt, butter or ghee together. Now a adequate water little by little to make soft dough.
8)      Make small balls out of this dough.
9)      Sprinkle some flour over the board & roll out thin rounds using rolling pan. ( same way you make parata)
10)  Now heat some oil, ghee or butter in a pan & fry this on both sides.
11) Spread mayonnaise over the circle while hot. Place 2 burger patties on the middle of the circle & bend it in to U shape while hot.
12)   Yummy tacos are ready.

Onion Pakoda ( healthy version)



Ingredients:-
Onions:-250 g
Yellow Gram Flour:-100g
Red chili powder: - 4 teaspoons
Turmeric:-1 teaspoons
Salt to taste
Curry leaves
Eggs: 2 (optional)

Method:-
1) Bring all the Ingredients together & mix it well.
2)  Now make flat patties out of this mixture.
3)  Heat 1 table spoon of oil in a non stick pan & place the Patties on the pan, fry them till edges become golden brown & turn sides, continue to fry till done under law flame. 
4) pakodas should turn out crispy.
